A vibrant and nutritious Buddha bowl combining roasted zucchini, chickpeas, fresh vegetables, and a flavorful herbed yogurt dressing.

Ingredients

Vegetables

  • 2 medium zucchinis (sliced into half-moons)
  • 1 can (15 oz) chickpeas (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1 large carrot (shredded or julienned)
  • 1 red bell pepper red bell pepper (sliced thin)
  • 1 cup baby spinach
  • 1 cup cooked quinoa or brown rice
  • 1 small cucumber (thinly sliced)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin powder

  • 2 tbsp chopped fresh parsley
  • 2 tbsp roasted sunflower seeds or pumpkin seeds
  • 1 small avocado (sliced (optional))
  • as needed Lemon wedges Lemon wedges (for serving)

Herbed Yogurt Dressing

  • 1 cup plain Greek yogurt or dairy-free yogurt
  • 2 tbsp fresh dill (finely chopped)
  • 1 tbsp fresh parsley (finely chopped)
  • 1 tbsp fresh mint (finely chopped)
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil

Instructions 

  • Roast the sliced zucchinis with olive oil, smoked paprika, cumin, salt, and pepper at 400°F (200°C) for 15 minutes.
  • Prepare the herbed yogurt by mixing Greek yogurt, dill, parsley, mint, garlic, lemon juice, olive oil, salt, and pepper.
  • Assemble the bowls with cooked quinoa, roasted zucchini, chickpeas, cherry tomatoes, carrot, bell pepper, spinach, cucumber, and avocado.
  • Drizzle with herbed yogurt and sprinkle with seeds and chopped parsley.
  • Serve with lemon wedges for added freshness.
