A hearty and healthy turkey chili perfect for a quick weeknight dinner, packed with beans and flavorful spices.

Ingredients

olive oil

  • 2 tablespoons olive oil

vegetables

  • 1 cup yellow onion (diced ¼ inch)
  • 2 tablespoons garlic (minced)

protein

  • 1 pound ground turkey (85 to 93% lean)

spices and seasonings

  • ¼ cup chili seasoning
  • 2 tablespoons tomato paste

vegetables

  • 1 cup red bell pepper (diced ¼ inch)
  • 2 tablespoons jalapeno (minced)

canned beans

  • 15 ounces red kidney beans (rinsed and drained)
  • 15 ounces pinto beans (rinsed and drained)
  • 15 ounces black beans (rinsed and drained)
  • 15 ounces crushed tomatoes (canned)
  • 14.5 ounces fire-roasted tomatoes (canned, plus juice)

liquids

  • 2 cups chicken stock (unsalted, or broth)
  • 2 tablespoons Worcestershire sauce

Instructions 

  • Heat a large pot over medium heat, add olive oil, then sauté onions for 2 minutes. Add garlic and cook for 30 seconds.
  • Add ground turkey and cook until no longer pink, about 4-6 minutes, breaking into small chunks.
  • Stir in chili seasoning, tomato paste, bell peppers, and jalapenos; cook for 1 minute each step.
  • Add beans, crushed tomatoes, liquids, and Worcestershire sauce; stir to combine, bring to a boil, then simmer for 25-30 minutes.
  • Season with salt and pepper to taste. Serve with desired toppings.

Notes

For extra flavor, top with fresh cilantro or sliced green onions.
