Instructions
Heat oil in a skillet, cook onion, bell pepper, ginger, and garlic until fragrant (~3 min).
Add curry paste and tofu, sauté 2 min.
Stir in pumpkin, coconut milk, water, sugar, salt, and pepper; simmer until pumpkin is tender (~15 min).
Stir in greens and cook 1-2 min until wilted. Remove from heat and add lime juice.
Serve warm over rice, garnished with basil, lime, and cashews.
Notes
Use firm tofu for best texture and press to remove excess moisture before cooking.
