Ingredients

Seeds and Dry Ingredients

  • 30 g sesame seeds (toasted and cooled)
  • 240 g plain gluten free flour blend
  • 20 g sugar
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 0.5 tsp xanthan gum
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground pepper
  • 10 g poppy seeds
  • 85 g cold unsalted butter, cubed
  • 80 g cold water

Toppings

  • 1 tbsp water
  • 1 tbsp sesame seeds
  • 0.5 tbsp poppy seeds
  • 1 tsp flaky sea salt

Instructions 

  • Preheat oven to 400ºF (200ºC). Toast sesame seeds until golden, then cool.
  • Mix dry ingredients, toasted sesame seeds, and poppy seeds. Cut in cold butter until crumbly. Add water, knead briefly, and rest for 5-10 minutes.
  • Divide dough, roll out very thin, and cut into crackers.
  • Transfer to baking sheet, brush with water, sprinkle toppings, and bake for 12-14 minutes until golden.
