A flavorful and nutritious vegetarian wrap combining roasted sweet potatoes, black beans, and fresh toppings, perfect for a quick lunch or dinner.

Ingredients

Sweet Potato and Black Bean Filling

  • 2 large sweet potatoes (Peeled and diced into ½-inch cubes)
  • 1 tablespoon olive oil (Used for roasting)
  • 1 15-ounce can black beans (Rinsed and drained)
  • 1 red bell pepper (Diced)
  • 1 small red onion (Finely chopped)
  • 2 cloves garlic (Minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • to taste salt and black pepper (For seasoning)
  • 1 lime juice (Added at the end)

Avocado Lime Crema

  • ½ cup plain Greek yogurt or sour cream (Vegan option: plant-based yogurt or silken tofu)
  • 1 ripe avocado (Key to a creamy sauce)
  • 1 lime juice (Provides tangy flavor)
  • ¼ cup fresh cilantro (Packed)
  • 1 small jalapeño (Optional, seeds removed)
  • a splash water (To thin crema)
  • to taste salt (To season the sauce)

Assembly

  • 8 large flour or whole wheat tortillas (Soft and pliable)
  • 1 cup shredded Monterey Jack or cheddar cheese (Optional, for melty goodness)
  • 2 cups chopped romaine lettuce or spinach (Fresh and crisp)

Instructions 

  • Roast diced sweet potatoes at 400°F (200°C) for 20-25 minutes until tender and caramelized.
  • Sauté red onion and bell pepper until softened, then add garlic and cook briefly.
  • Add black beans and spices to the vegetables, then fold in roasted sweet potatoes and lime juice. Season to taste.
  • Blend Greek yogurt, avocado, lime juice, cilantro, and jalapeño until smooth; thin with water if needed and season with salt.
  • Warm tortillas, then fill with the sweet potato mixture, cheese, lettuce, and drizzle with crema. Roll up and serve.

Notes

For extra flavor, toast the rolled wraps in a skillet until golden and crispy before serving.
