A quick and flavorful vegan dish featuring crispy tofu and tender zucchini in a lemony, savory sauce.
Ingredients
Cornstarch
4tablespoonscornstarch(divided)
1teaspoonsalt(divided)
¾teaspoonblack pepper(divided)
3teaspoonsItalian seasoning(divided)
1blockextra firm tofu
1tablespoonolive oil
2tablespoonsvegan butter(divided)
3 to 4mediumzucchini
4clovesgarlic(minced)
½cupstock
½cupdairy-free milk(unsweetened & unflavored)
1mediumlemon(zest & juice)
Instructions
Mix 3 tbsp cornstarch, ½ tsp salt, ½ tsp black pepper, and 2 tsp Italian seasoning.
Cut tofu into 4 squares and coat with the cornstarch mixture.
Heat oil and 1 tbsp vegan butter, cook tofu until golden (~5 min each side). Dice zucchini and coat with remaining cornstarch.
Add zucchini and garlic, cook until tender (~4-5 min). Add liquids, seasonings, and lemon zest, simmer until thickened (~5 min). Finish with lemon juice and butter.
Notes
Serve hot with rice or crusty bread for a complete meal.
