Delight in these rich, nutty pecan pie cookies that combine the flavors of classic pecan pie with the convenience of cookies.
Ingredients

Instructions
Preheat oven to 350°F (175°C). Toast chopped pecans for 5 minutes, then set aside.
Cream butter, corn syrup, brown sugar, and vanilla. Add eggs and mix well.
Mix in flour, pudding mix, baking soda, and salt. Fold in toasted pecans.
Drop spoonfuls onto a parchment-lined sheet, flatten slightly, and sprinkle with raw sugar.
Bake at 375°F (190°C) for 8-11 minutes until lightly browned. Cool and enjoy!
Notes
For best flavor, toast pecans before adding to the dough.
