One-Pot White Bean Pasta

A quick and hearty vegetarian dish combining pasta, beans, and fresh vegetables in a single pot for easy cleanup and delicious flavor.

Ingredients

olive oil

  • 1 Tbsp olive oil or extra virgin olive oil (plus more to drizzle)
  • 3 cloves garlic cloves (minced)
  • 0.5 tsp paprika
  • 0.25 tsp chili flakes
  • 1 can (15 oz) cannellini beans (or Great Northern beans)
  • 0.125 tsp black pepper (freshly ground)
  • 2.5 cups water or low sodium vegetable broth
  • 0.5 tsp fine salt (or according to taste)
  • 8 oz short pasta shapes ((fusilli, penne, bow ties...))
  • 4 oz baby spinach (washed)
  • 4 oz cherry tomatoes (cut into halves)
  • 2 oz freshly grated parmesan (plus more to serve)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add garlic and cook until fragrant, about 45 seconds.
  • Add paprika, chili flakes, beans, black pepper, water or broth, and salt. Bring to a boil.
  • Add pasta, cover, and cook, stirring frequently, until pasta is al dente, about 10 minutes. Add spinach and tomatoes in the last 2 minutes and stir until wilted.
  • Turn off heat, stir in parmesan until melted, and season to taste. Serve with a drizzle of olive oil, black pepper, and extra parmesan if desired.

Notes

Feel free to add more cheese or herbs for extra flavor.
