A nutritious and flavorful bowl combining hearty pearl barley with fresh vegetables and spiced paneer, perfect for a wholesome meal.

Ingredients

Grains

  • 0.5 cup Pearl Barley
  • 1.25 cup water
  • Pinch salt

Vegetables

  • 0.25 cup chopped onion
  • 0.25 cup carrots (chopped)
  • 0.25 cup bell peppers (chopped)
  • 1 Roma tomato finely chopped tomato
  • 1 teaspoon ginger (paste or grated)
  • 2 teaspoons garlic (grated or paste)
  • 0.5 teaspoon red chili powder (or green chillies)
  • 0.5 teaspoon coriander powder
  • 0.25 teaspoon turmeric
  • 1 teaspoon pav bhaji masala (or garam masala)

Paneer

  • 16 rectangular pieces paneer (1-2” long)
  • 2 tablespoons mustard oil (or of choice)
  • 3 tablespoons yogurt
  • 1.5 teaspoons roasted besan
  • 0.5 teaspoon grated garlic
  • 0.5 teaspoon red chili powder
  • Pinch turmeric
  • 0.5 teaspoon coriander powder
  • 0.5 teaspoon chaat masala

Salad & Garnish

  • 3 cups packed Spring mix
  • 12-16 Cherry Tomatoes Cherry Tomatoes
  • to taste Salt and pepper
  • squeeze lemon juice
  • 1 cup yogurt (or more if desired)
  • Pinch paprika
  • Pinch rock salt
  • Pinch cumin

Instructions 

  • Cook pearl barley with water and a pinch of salt until tender, about 25 minutes.
  • Sauté chopped vegetables and spices in oil until soft, then add chopped tomato and cook for 5 minutes.
  • Grill or pan-fry paneer pieces until golden brown.
  • Assemble the bowl with cooked barley, sautéed vegetables, paneer, and fresh greens. Drizzle with yogurt and lemon juice, then garnish with cherry tomatoes and spices.
  • Serve immediately and enjoy a wholesome, flavorful meal.

Notes

You can customize the spice level and add your favorite vegetables for variety.
