This easy recipe guides you through roasting a whole pumpkin and making a smooth, delicious puree perfect for fall dishes.
Ingredients
Pumpkin

maple syrup

cinnamon
Instructions
Preheat oven to 400°F (200°C).
Cut a 2-inch hole in the top of the pumpkin, remove the top, and scoop out seeds and pulp.
Pour maple syrup into the pumpkin, swirl to coat, and sprinkle cinnamon inside.
Bake pumpkin without top for 40 minutes, then replace the top and bake for an additional 20 minutes until tender. Cool before handling.
Scoop out the flesh and puree in a food processor until smooth, adding water if needed.
Notes
Use fresh pumpkin for best flavor and texture.
