A delicious, protein-packed loaf with a hint of maple and crunchy pecans, perfect for a healthy snack or breakfast.
Ingredients

Instructions
Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
Mix dry ingredients in a bowl; beat eggs and combine with coconut oil and maple extract.
Combine wet and dry mixtures to form batter; fold in three-quarters of pecans.
Pour batter into pan, top with remaining pecans, and bake for 40–45 minutes.
Cool for 20 minutes, then transfer to a rack and cool completely before slicing.
