A delicious and nutritious baked French toast casserole packed with protein, perfect for a hearty breakfast or brunch.

Ingredients

Bread

  • 14 ounces high protein bread (low carb sourdough seeded loaf) (from Robert Anderson)
  • 0.5 cup chopped pecans (45g)
  • 2 large eggs
  • 0.5 cup egg whites (120ml)
  • 1.5 cups filtered milk
  • 0.25 cup granulated sweetener (xylitol, 50g)
  • 1 medium orange (zested)
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 4 tablespoons unsalted butter (melted)
  • 3 tablespoons sugar-free maple syrup (Good Good brand)
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • to taste sugar-free maple syrup
  • to taste powdered sugar or sweetener
  • to taste dried cranberries or raisins

Instructions 

  • Preheat oven to 190°C/375°F and grease a baking dish.
  • Slice or tear bread into 1-2 inch pieces and layer with pecans in the dish.
  • Whisk eggs, egg whites, milk, sweetener, orange zest, vanilla, cinnamon, and salt. Pour over bread layers.
  • Mix melted butter, maple syrup, cinnamon, and salt; drizzle over casserole.
  • Bake for 35-45 minutes until set and top is crisp. Cool 10 minutes before serving with toppings.

Notes

Use high-quality bread for best texture and flavor. Adjust toppings to taste.
