Enjoy these soft, chewy, high-protein cookies that are perfect for a healthy snack or dessert. They are easy to make and low in calories.
Ingredients

oat flour (or all-purpose flour)

approx. 30g vanilla or chocolate protein powder

cup
natural peanut butter (or almond butter)

plain Greek yogurt

honey or maple syrup

dark chocolate chips

cocoa powder (for chocolate version)

Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix peanut butter, Greek yogurt, egg, and honey until smooth.
Add oat flour, protein powder, baking soda, salt, and mix into a soft dough. Add extra flour if needed.
Let dough sit for 5 minutes, then fold in chocolate chips and cocoa powder.
Portion into 12 balls, flatten, and bake for 10–12 minutes. Cool before serving.
Notes
For softer cookies, do not overbake. Store in an airtight container for up to a week.
