A comforting, nutritious pumpkin soup that's quick to prepare and perfect for a cozy meal.

Ingredients

Oil

  • 0.5 Tbsp olive oil

Vegetables

  • 1 sweet onion diced sweet onion
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 head cauliflower, florets diced (about 5 cups of florets)

Broth

  • 4 cups vegetable or chicken broth
  • 1 15 ounce can unsweetened pumpkin puree (about 1.75 cups)

Sweetener

  • 1 tablespoon maple syrup or brown sugar (for a slightly sweeter soup)
  • 1 tsp salt (to taste)

Coconut Milk

  • 0.5 cup full-fat canned coconut milk (or heavy cream)

Optional Garnish

  • sliced green onions, chives, or sour cream

Instructions 

  • Heat oil in a large pot over medium heat. Sauté onion until soft, then add garlic and ginger; cook for 1 minute.
  • Add cauliflower, broth, and pumpkin; bring to a boil, cover, and simmer for 20-30 minutes until cauliflower is tender.
  • Stir in maple syrup, salt, and coconut milk. Use an immersion blender or transfer to a blender to puree until smooth.

Notes

This soup is perfect for a quick, healthy meal. Adjust sweetness with more maple syrup if desired.
