Ingredients

  • 1 kg russet potatoes (scrubbed clean)
  • 150-200 g all-purpose flour (plus more for dusting)
  • 1 large egg (lightly beaten)
  • 1 teaspoon salt
  • ¼ teaspoon freshly grated nutmeg (optional)
  • 2 tablespoons olive oil (for serving, optional)
  • Your favorite for serving pasta sauce

Instructions 

  • Boil the potatoes in salted water until fork-tender, then peel while warm and rice or mash thoroughly.
  • Mix the riced potatoes with beaten egg, salt, nutmeg, and gradually add flour to form a soft dough. Knead gently until just combined.
  • Divide dough, roll into ropes, cut into ¾-inch pieces, and shape as desired. Place on a floured surface.
  • Cook the gnocchi in boiling salted water until they float, then cook for an additional 30 seconds. Remove with a slotted spoon.
  • Serve immediately with your favorite warm pasta sauce, drizzled with olive oil and sprinkled with Parmesan if desired.

Notes

Handle the potatoes while warm for easier peeling and rice for a smoother dough.
