Instructions
Soak dried mushrooms in hot water for 5 minutes, then squeeze out and set aside.
Heat olive oil in a large pot, sauté garlic, ginger, and chili for 1 minute. Add soaked mushrooms, chopped mushrooms, soy sauce, salt, and pepper; cook for 5 minutes.
Add vegetable broth and soaking water (pass through a fine sieve). Bring to a boil, then add tofu, broccoli, and peas. Simmer for 10-15 minutes.
Optional: Dissolve miso paste in hot broth and add before turning off heat. Adjust seasoning as needed.
Serve hot, garnished with scallions, cilantro, and a drizzle of sesame or chili oil. Add noodles or other toppings if desired.
