A comforting and flavorful vegan tofu soup packed with vegetables, mushrooms, and aromatic spices. Perfect for a quick, nourishing meal.

Ingredients

Broth and Mushrooms

  • 16 ounces firm tofu
  • 2 tablespoons olive oil
  • 3 cloves garlic (grated)
  • 1.5 inches ginger (grated)
  • 0.5 red hot chili red hot chili (thinly sliced)
  • 0.75 cup dried mushrooms (shiitake are best)
  • 8 ounces mushrooms (chopped)
  • 3 tablespoons soy sauce (reduced-sodium)
  • 6 cups vegetable broth
  • 1 cup broccoli florets (or substitute vegetables)
  • 0.75 cup frozen peas (or substitute other greens)
  • 1 heaping tablespoon miso paste (optional)
  • 4 servings noodles (optional)
  • 0.5 teaspoon salt
  • 2 twists black pepper

Garnish

  • 1 scallion scallion (chopped)
  • cilantro
  • sesame oil (for garnish)

Instructions 

  • Soak dried mushrooms in hot water for 5 minutes, then squeeze out and set aside.
  • Heat olive oil in a large pot, sauté garlic, ginger, and chili for 1 minute. Add soaked mushrooms, chopped mushrooms, soy sauce, salt, and pepper; cook for 5 minutes.
  • Add vegetable broth and soaking water (pass through a fine sieve). Bring to a boil, then add tofu, broccoli, and peas. Simmer for 10-15 minutes.
  • Optional: Dissolve miso paste in hot broth and add before turning off heat. Adjust seasoning as needed.
  • Serve hot, garnished with scallions, cilantro, and a drizzle of sesame or chili oil. Add noodles or other toppings if desired.
