Ingredients

Sweet Potatoes

  • 1 large Sweet Potato, peeled and cubed (Roasting with smoked paprika enhances sweetness.)
  • 1 tbsp Olive Oil (Helps crisp the sweet potatoes.)
  • 1 tsp Smoked Paprika (Key for Tex-Mex flavor.)
  • Salt & Pepper to taste Salt & Pepper
  • 0.5 lb Ground Beef (Can substitute with turkey, chicken, or plant-based options.)
  • 1 tbsp Taco Seasoning (For bold flavor.)
  • 2 tbsp Water (Helps seasoning adhere.)
  • 0.25 cup Guacamole (Adds creaminess.)
  • 2 tbsp Sour Cream (Optional for creaminess.)

Optional Garnishes

Tortilla Chips

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until crispy.
  • While sweet potatoes roast, cook ground beef in a skillet over medium heat. Add taco seasoning and water; cook until beef is browned and seasoned.
  • Assemble bowls by dividing roasted sweet potatoes and seasoned beef. Top with pico de gallo, guacamole, sour cream, and optional garnishes. Serve with tortilla chips.

Notes

For extra flavor, sprinkle with fresh cilantro and squeeze lime juice before serving.
