A simple and flavorful pasta dish featuring fresh figs, garlic, and vegan parmesan, perfect for a quick yet elegant meal.

Instructions
Boil water with 2½ teaspoons salt, cook pasta until al dente, then drain, reserving ¼ cup pasta water.
Trim woody stems from figs, wash, cut into wedges, and set aside 1½ figs raw for garnish.
Heat olive oil in a pan, add garlic and rosemary, cook gently until fragrant, then add fig wedges and cook for 2 minutes.
Combine drained pasta with fig mixture, add vegan parmesan, black pepper, remaining salt, and reserved pasta water, toss well.
Divide into bowls, top with raw fig wedges, extra parmesan, and a drizzle of olive oil. Serve immediately.
Notes
Use ripe figs for the best flavor and adjust salt to taste.
