(woody ends trimmed, leaves removed, sliced)

(cube, bouillon or homemade)

Instructions
Prepare all ingredients: slice Brussels sprouts, peel and chop potatoes, clean and slice leek, chop garlic.
Heat oil in a large pot, sauté leek and garlic until softened.
Add Brussels sprouts, bay leaves, and herbs; cook briefly. Add potatoes and stock, then simmer until potatoes are tender.
Remove from heat, stir in spinach if using, then blend until smooth or desired texture. Season with salt, pepper, and optional lemon juice or cream.
Notes
You can add lemon juice or cream for extra flavor and richness.
