This vibrant and nutritious bowl combines tender baked salmon with sweet potatoes and fresh greens, all seasoned with smoky spices for a bold flavor experience.

Ingredients

Protein

  • 2 fillets Salmon (Choose fresh, skin-on pieces)

Vegetables

  • 2 medium Sweet potatoes (Firm and medium-sized)

Seasonings

  • 2 tablespoons Olive oil (Extra virgin for roasting)
  • 1 teaspoon Smoked paprika (Adds smoky depth)
  • 1 teaspoon Garlic powder (Boosts savory notes)
  • to taste Salt (Essential seasoning)
  • to taste Black pepper (Essential seasoning)
  • 1 tablespoon Fresh herbs (Like parsley or dill)
  • 1 handful Baby spinach or kale (Extra greens)
  • 1 lemon Lemon wedges (For serving)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes until tender.
  • While sweet potatoes roast, season salmon fillets with salt, pepper, and a drizzle of olive oil. Bake in the oven for 12-15 minutes until cooked through.
  • In a bowl, combine fresh herbs and greens. Squeeze lemon wedges over the greens for added flavor.
  • Assemble the bowls by dividing roasted sweet potatoes, greens, and salmon among serving bowls. Garnish with additional herbs and lemon if desired.

Notes

For extra flavor, add a drizzle of tahini or a sprinkle of chili flakes.
