A quick and flavorful pumpkin soup made effortlessly in the air fryer, perfect for cozy days.

Ingredients

Vegetables

  • 1.5-2.5 pounds Fresh pie pumpkin, peeled, seeded, and cut into 1” cubes (approximate weight)
  • 1 piece Yellow onion, peeled and quartered
  • 3-4 cloves Cloves garlic, peeled (or more to taste)
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 1 tsp salt (or more to taste)
  • 0.5 tsp black pepper (or more to taste)
  • 0.25 tsp cayenne pepper (optional; omit for less heat)
  • 1.5 cups vegetable stock (or chicken stock)
  • 0.5 cup heavy cream or half and half

Instructions 

  • Add pumpkin, onion, and garlic to the air fryer basket. Drizzle with oil, syrup, and seasonings.
  • Cook at 400°F (200°C) for 20-25 minutes, stirring halfway, until vegetables are caramelized and soft.
  • Blend cooked vegetables with stock until smooth, then add cream and blend briefly.
  • Taste and adjust seasonings as needed. Serve warm, topped with pepitas or parsley if desired.

Notes

For a spicier soup, add more cayenne or chili flakes.
