A quick and comforting dish combining pasta, turkey, and a creamy sauce, perfect for using leftovers.
Ingredients
Pasta
300
g
pasta (fusilli, penne, spaghetti, or linguine)

tablespoons
olive oil

unit
onion, sliced

mushrooms (or other vegetables), sliced
3
cloves
garlic
(minced)

leftover turkey or chicken, shredded
300
ml
double (heavy) cream
to taste
Salt and pepper

tablespoons
fresh parsley, finely chopped
to serve
Grated parmesan cheese
Instructions
Cook pasta in salted boiling water until al dente, then drain, reserving some cooking water.
In a pan, heat olive oil, cook sliced onions for 3 minutes until softened.
Add mushrooms and cook for 3 minutes until browned, then add garlic and turkey, cook 2 minutes.
Pour in cream, season with salt and pepper, simmer 5 minutes until sauce thickens.
Mix in pasta and reserved water, stir in half parsley, then serve garnished with remaining parsley and parmesan.
Notes
You can substitute fresh herbs or vegetables to customize the flavor.
