Instructions
Boil green beans in salted water for 4-5 minutes, then drain and cool in ice water.
In a skillet, melt butter and sauté onions until softened, then add garlic and mushrooms, cooking until browned.
Stir in flour, then gradually whisk in milk and cream until thickened. Add soy sauce, salt, pepper, and nutmeg.
Fold green beans into the sauce, then transfer to a greased baking dish. Top with half the crispy onions.
Bake at 180°C (160°C fan) for 20-25 minutes, then top with remaining onions and bake for 5 more minutes.
Notes
For extra flavor, add a dash of thyme or parsley before baking.
