Instructions
Wash the chestnuts, boil for 15 minutes, then peel with a knife.
Puree the peeled chestnuts using a food mill or potato masher, yielding about 3.5 lbs of pulp. Cut the vanilla bean lengthwise and extract seeds.
In a pan, combine vanilla pod, seeds, sugar, and water. Melt sugar over medium heat for 10 minutes.
Remove vanilla pod, add chestnut pulp, and cook over low heat for 1 hour, stirring occasionally until creamy.
Grate lemon peel and add to the mixture. Transfer to jars and let cool.
