Ingredients

Vegetables

  • 1 medium Butternut Squash (peeled, seeded, and cut into ½-inch cubes)
  • 1 tablespoon Avocado Oil (or other high-heat oil)
  • 1 large Head of Broccoli (cut into small florets)
  • 1 medium Red Bell Pepper (seeded and sliced)
  • 1 cup Shiitake Mushrooms (stems removed and caps sliced)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Fresh Ginger (grated)
  • ½ cup Vegetable Broth (used for steaming)
  • ¼ cup Low-Sodium Soy Sauce (or Tamari for gluten-free)
  • 2 tablespoons Maple Syrup (or honey)
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Cornstarch (mixed with water to create slurry)
  • 1 teaspoon Toasted Sesame Oil (added at the end)

Optional Garnishes

  • Toasted sesame seeds, sliced green onions, chopped cashews (for garnish)

Instructions 

  • Prepare the butternut squash by peeling, seeding, and cutting into ½-inch cubes.
  • Whisk soy sauce, maple syrup, rice vinegar, and broth; mix cornstarch with water to make slurry.
  • Sauté squash in oil until browned, then steam with broth until tender. Remove and set aside.
  • Stir-fry broccoli, bell pepper, and mushrooms; add garlic and ginger until fragrant.
  • Pour sauce over vegetables, add squash, and thicken with slurry until glossy. Finish with sesame oil and serve.
