Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 garlic cloves garlic, minced
  • 1 medium butternut squash (3 pounds), peeled and cubed
  • 4 cups vegetable broth
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup heavy whipping cream

Optional Toppings

  • Additional heavy whipping cream and crispy sage leaves (Optional garnish)

Instructions 

  • Heat oil in a large saucepan over medium heat. Add onion and cook until tender, then add garlic and cook for 1 minute.
  • Add squash, broth, salt, and pepper. Bring to a boil, then simmer until squash is tender, about 10-15 minutes.
  • Puree the soup using an immersion blender or in batches in a blender. Return to the pot.
  • Stir in the heavy cream and cook until heated through. For a thicker soup, whisk in a roux made of oil and flour before adding the cream.
  • Serve hot, garnished with additional cream and crispy sage if desired. Feel free to add toppings like pepitas, cheese, or croutons.

Notes

For a richer flavor, roast the squash before adding to the soup.
