Ingredients

  • 1 large Yellow Onion (Forms the sweet, savory base of the curry.)
  • 3-4 cloves Garlic (Adds a pungent, aromatic depth.)
  • 1 tbsp Fresh Ginger (Provides a warm, zesty spice.)
  • 1 medium Butternut Squash (The sweet, nutty star of the dish.)
  • 1.5 cups Red Lentils (The key to the curry’s hearty texture and creamy consistency.)
  • 2 tbsp Curry Powder (A complex blend of spices for flavor.)
  • 1 tsp Ground Turmeric (Adds earthy flavor and color.)
  • 1 tsp Ground Cumin (Lends warm, smoky depth.)
  • ½ tsp Ground Coriander (Contributes citrusy note.)
  • Pinch optional Red Pepper Flakes or Cayenne Pepper (For extra heat.)
  • 1 14.5 oz Diced Tomatoes (Adds acidity and sweetness.)
  • 4 cups Vegetable Broth (Primary cooking liquid.)
  • 1 13.5 oz Full-Fat Coconut Milk (Creates rich, creamy finish.)
  • 1-2 tsp Salt (To taste.)
  • 1 lime Juice of Lime (Brightens the dish.)

Garnish

Instructions 

  • Heat oil in a large pot, sauté diced onion until translucent, then add garlic and ginger; cook until fragrant.
  • Add spices and toast for 1 minute to bloom flavors.
  • Add butternut squash, lentils, tomatoes, and broth; bring to a boil, then simmer for 20-25 minutes until squash is tender and lentils soften.
  • Stir in coconut milk, simmer uncovered for 5-10 minutes to thicken. Off heat, add lime juice, season with salt, and garnish with cilantro.

Notes

Adjust seasoning to taste and serve hot with rice or bread.
