Instructions
Heat oil in a large pot, sauté diced onion until translucent, then add garlic and ginger; cook until fragrant.

Add butternut squash, lentils, tomatoes, and broth; bring to a boil, then simmer for 20-25 minutes until squash is tender and lentils soften.
Stir in coconut milk, simmer uncovered for 5-10 minutes to thicken. Off heat, add lime juice, season with salt, and garnish with cilantro.
