A quick and affordable stir fry packed with tender chicken, crisp vegetables, and flavorful soy sauce, served over rice.

Ingredients

Protein

  • 8 oz boneless, skinless chicken breast (sliced as thin as possible)

Vegetables

  • 2 cups mixed vegetables (fresh or frozen)

Sauces and seasonings

  • 0.25 cup soy sauce (regular, not low-sodium)
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 2 tbsp vegetable oil (divided)

Cooked rice

  • 2 cups white rice (day-old preferred)

Seasoning

  • to taste salt and pepper
  • 2 green onions green onions (sliced for garnish)

Instructions 

  • Slice chicken very thin and marinate in soy sauce, garlic, and ginger for 15-20 minutes.
  • Heat 1 tbsp oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • Add remaining oil, stir-fry vegetables for 3-4 minutes until tender-crisp.
  • Return chicken to skillet, add leftover marinade, and cook for 1 minute until heated through. Season with salt and pepper as needed.
  • Serve hot over rice, garnished with sliced green onions.

Notes

Use day-old rice for better texture. Cook vegetables in batches if skillet isn't large enough. Stir fry on high heat for best results.
