Instructions
Preheat oven to 200°C (400°F). Toss sweet potatoes with olive oil, salt, pepper, and paprika; roast for 25-30 minutes.
Cook grains according to package instructions. Prepare vegetables and whisk dressing ingredients until smooth.
Assemble bowls with grains, roasted sweet potatoes, chickpeas, and fresh vegetables. Top with avocado slices and drizzle with dressing.
