A vibrant and nutritious bowl combining grains, roasted vegetables, fresh greens, and a creamy tahini dressing for a wholesome meal.

Ingredients

Grains

  • 2 cups cooked brown rice or quinoa

Protein

  • 1 can (15 oz) chickpeas, drained and rinsed

Vegetables

  • 1 large sweet potato, cubed
  • 1 cucumber sliced cucumber
  • 1 cup carrots, shredded
  • 1 avocado sliced avocado
  • 1 cup red cabbage, shredded
  • 2 cups spinach or mixed greens

Dressing

  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp maple syrup or honey
  • 2–4 tbsp water (to thin dressing)

Optional toppings

  • Sesame seeds (optional)
  • Pumpkin seeds (optional)
  • Fresh herbs (optional)

Instructions 

  • Preheat oven to 200°C (400°F). Toss sweet potatoes with olive oil, salt, pepper, and paprika; roast for 25-30 minutes.
  • Cook grains according to package instructions. Prepare vegetables and whisk dressing ingredients until smooth.
  • Assemble bowls with grains, roasted sweet potatoes, chickpeas, and fresh vegetables. Top with avocado slices and drizzle with dressing.
